The preparation of these chicken pesto is very easy, and what makes the recipe special and delicious is the marinade, which keeps the meat moist and very flavorful. You start with the marinade mixture, which we made by combining olive oil, honey, lemon juice, minced garlic, dried rosemary and thyme, sweet paprika, salt, and grated cheese in a bowl.

Place the chicken thighs in the marinade, making sure to coat them well, and let the meat rest for at least ten minutes. The longer you let it rest, the more flavorful it will become. After the resting time, simply place the marinated chicken in the air fryer basket and cook at 200°C (400°F) for about 20 minutes, until the chicken steaks are cooked through on the inside and nicely golden on the outside.

  • 2 tablespoons lemon juice

  • 2 tablespoons grated cheese
  • Dried rosemary, to taste
  • Dried thyme to taste
  • Sweet paprika, to taste
  • Fine salt to taste

  1. In a bowl, combine the olive oil, honey, lemon juice, minced garlic, rosemary and thyme, sweet paprika, grated cheese, and salt.
  2. Mix everything well to obtain a uniform mixture, which will be used as a marinade for the chicken steaks.”
  3. Place the chicken thighs in the prepared marinade, making sure they are well coated. Let them marinate for about 10 minutes.
  4. Now place the marinated chicken thighs in the basket lined with parchment paper, making sure they are arranged in a single layer without overlapping. Cook the meat at 200°C (400°F) for about 20–25 minutes, or until the chicken steaks are golden and fully cooked inside.
  5. Serve the chicken steaks hot with their juices, optionally accompanied by a side dish of your choice.

Tips
Thighs are the perfect cut for this recipe because they stay juicy and flavorful. We used boneless thighs, but you can leave the bone in if you prefer. Alternatively, boneless drumsticks also work. If you prefer chicken breast, choose a thick piece, let it marinate for about half an hour, and keep in mind that it will cook faster.

You can customize the marinade in many ways, changing herbs and spices or omitting the honey if you want it less sweet.

Storage
If you have leftover chicken steaks, let them cool completely, then store them in the fridge in an airtight container and eat them within a day, reheating in the air fryer or in a pan.
