Pasta with pea cream and speck: an easy and quick recipe

Tasty and a bit crunchy, this pasta is really appetizing! It is prepared in just over a quarter of an hour and is perfect for when we want to bring a colorful, good and a little different than usual, but we do not have much time to cook. Paccheri with pea and speck cream can be eaten both hot as just made and cold, but certainly the speck will be more crispy and tasty in the first case.

The pasta with pea cream is a first that we can prepare every day and all year round because we can also use frozen peas, which we often already have in the freezer and cook in an instant. For the speck, I use the stick one because it remains nice crispy and is easy to distribute throughout the paste.

Regarding the pasta format, in my opinion the paccheri are perfect for this seasoning, but we can use any type of pasta, long or short. My advice, when we prepare these beautiful creamy first courses, is still to use a type of pasta in which the dressing can enter for goods, such as pennettes or half sleeves, for example, but the choice!

Ingredients
  

  • 320 g patccheri
  • 400 g peas fresh or frozen
  • 100 g speck in stick
  • 1to 2 onions
  • Extra virgin olive oil
  • salt up q,b
  • pepper q,b

Method
 

  1. We put the water on the fire for the pasta and when it boils we go up and throw the paccheri.
  2. In the meantime, we prepare the seasoning: in a pan we fry the chopped onion in a drizzle of oil and then add the peas. We add salt and pepper and cook for about 10 minutes.
  3. Let’s blend the cooked peas together with a tablespoon of pasta cooking water until we get a cream.
  4. Let's sauté the speck in a pan.
  5. Scolify the pasta al dente and sparrow with the speck.
  6. Let's add the cream of peas to the dough, we mix well and bring to the table!
