Here is a really simple and quick recipe to bring to the table a very, very delicious appetizer that will be impossible to resist: the fritters of cabbage! Tasty and fragrant, they are prepared with few ingredients and with a process within everyone’s reach.
Scred pancakes: quick and easy recipe
We need a few leaves of cabbage cabbage, oil to fry and the necessary to make a delicious batter: eggs, grated cheese, flour, sparkling water and a pinch of salt. This is a rich batter, but if you want you can prepare the classic batter, only with beer, salt and flour. A little lighter and also suitable for those who, by choice or intolerance problems, do not eat eggs.
The cabbage pancakes we can call it a recycling dish, because the same recipe can also be good for other types of vegetables and vegetables. For example, instead of cabbage we could use zucchini or cabbage, or cauliflower, which is good to boil first.
These cheerful and delicious fritters are perfect as an appetizer, to open a rustic menu, and a truly original way to eat cabbage.

- Clean the cabbage leaves by removing the hard part in the center.
- Let's roll them up and cut them into many thin strips, then put them aside.
- Let's get the batter ready. In a bowl we break the eggs, add the grated cheese, the carbonated water, the salt and mix well with a fork.
- Now we incorporate the flour, always stirring with the fork.
- Let's join the cabbage cut to the batter, blending well.
- We prepare a pan or a large pan with oil to fry and, as soon as it becomes very hot (about 170 degrees C), we shape our pancakes and fry them by turning them occasionally until golden browning. It'll just take a couple of minutes.
- When they are ready, drain them and place them on a sheet of absorbent paper to eliminate excess oil.
- We serve our hot and fragrant cabbage pancakes, perhaps accompanied by a fresh yogurt sauce!
Advices
We can enrich and taste the batter with some spice or aromatic grass, according to our tastes. I chose to put only a pinch of salt, to better taste the taste of cabbage. Even after fried, I did not add salt, but personal preferences are always worth it!
