Here’s a fresh and tasty starter or main dish, perfect for warm weather and easy to customize in many ways: couscous with beans and shrimp! Benedetta came up with this recipe to cook legumes in a different way, and the result was excellent. The beans go really well with the shrimp, and together these two ingredients make a perfect topping for couscous.

I chose pre-cooked cannellini beans, but you can also use borlotti beans—preferably pre-cooked to save time. As for the shrimp, both fresh and frozen work perfectly, since either way they only take a few minutes to cook.
The preparation is really a breeze. First of all we will inflate our couscous with hot water in which we will have mixed turmeric, oil and a pinch of salt. While you can flavor absorbing all the water – it will take about 5 minutes – we will prepare the seasoning in a pan, with a sauté of onion to which we will add a zucchini first, then the cannellini and shrimp.

Finally, mix the couscous well with the topping, and you can choose to enjoy it immediately or chill it in the fridge and serve it cold for dinner. Or take it to the beach or park for a really delicious outdoor lunch!”
A few tips
You can use turmeric, but feel free to add any spice you like to the water: curry, saffron, or even a mix.
If you want a vegetarian dish, you can replace the shrimp with bell peppers. Don’t feel like using the stove because it’s hot? Just use raw vegetables, cut into small pieces. The result will still be delicious.

- In a saucepan we put the water, turmeric, a pinch of salt, a tablespoon of oil and mix.

- We bring the water flavored to a boil almost.

- In a large bowl we put the couscous and pour over the hot water, mix quickly and cover with a dish, letting stand for about 5 minutes. After the time, the cous cous will have swelled.

- In the meantime, we prepare the seasoning. In a pan we sauté with the thinly cut onion.

- As soon as it is browned, we add the zucchini to rounds. We give salt and let it cook for a few minutes.

- Now add the cannellini beans.

- We also combine shrimp and let it cook just a few minutes.

- Now we widen the cous cous well by eliminating any lumps with the fork.

- We pour the dressing directly into the bowl and mix well.

- When we are platy, we add a little oil and decorate with a mint sheet. Our cous cous beans and shrimp is ready: enjoy!
