Here is a fresh and delicious first course or dish, perfect for the summer and customizable in many ways: the cous cous cous beans and shrimps! Benedetta thought of this recipe to cook legumes in a different way than usual and the result was great. The beans go well with shrimp and together these two ingredients are a perfect condiment for cous cous.
Cous cous with beans and shrimps: the quick and easy recipe of Benedetta
Benedetta has chosen cannellini beans already cooked, but we can also use the borlotti, better if pre-cooked to optimize the preparation times. The shrimp, on the other hand, are fine both fresh and frozen, since in both cases it takes a few minutes to cook.
The preparation is really a breeze. First of all we will inflate our couscous with hot water in which we will have mixed turmeric, oil and a pinch of salt. While you can flavor absorbing all the water – it will take about 5 minutes – we will prepare the seasoning in a pan, with a sauté of onion to which we will add a zucchini first, then the cannellini and shrimp.

Finally, we will mix the cous cous well with the seasoning and we can decide whether to enjoy it immediately or put it in the fridge and serve it cold for dinner. Or maybe take it to the beach or to the park, for a really delicious outdoor lunch!
A few tips
Benedetta has chosen turmeric, but we can add to the water the spice we prefer: curry, saffron or even a mix.
If we want a vegetarian dish, we can replace the shrimp with peppers. Don’t we go to use the stove because it’s hot? We only use raw vegetables, cut into small pieces. The result will be exquisite.

- In a saucepan we put the water, turmeric, a pinch of salt, a tablespoon of oil and mix.
- We bring the water flavored to a boil almost.
- In a large bowl we put the couscous and pour over the hot water, mix quickly and cover with a dish, letting stand for about 5 minutes. After the time, the cous cous will have swelled.
- In the meantime, we prepare the seasoning. In a pan we sauté with the thinly cut onion.
- As soon as it is browned, we add the zucchini to rounds. We give salt and let it cook for a few minutes.
- Now add the cannellini beans.
- We also combine shrimp and let it cook just a few minutes.
- Now we widen the cous cous well by eliminating any lumps with the fork.
- We pour the dressing directly into the bowl and mix well.
- When we are platy, we add a little oil and decorate with a mint sheet. Our cous cous beans and shrimp is ready: enjoy!
