Do we have to organize a dinner with last minute friends and the time for cooking is little? Here is a simple and quick dish to enjoy both as an appetizer and as a second : salmon and zucchini skewers.
Salmon and zucchini skewers in batter: the quick and easy recipe
An easy idea for a tasty and delicious dish that is prepared in a few minutes. Just cut into cubes both the downed salmon and the zucchini, compose the skewers, prepare a light batter on the fly and then fry them until they turn golden and crispy!
With the same recipe we can also prepare skewers of swordfish or tuna. And vary the vegetables, for example by choosing aubergines or peppers.
We can also do rather large skewers and serve them as a flat second, but an original idea may be to cut smaller pieces to create fingerfoods for an aperitif or a standing dinner.

Method
- We remove the skin from the salmon and cut it into chunks about 2 cm or a little more.
- We also cut the zucchini into cubes.
- We put a piece of salmon in the skewers, then one of zucchini, then the salmon again and finally the zucchini. We sink with salt and a pinch of pepper.
- Let's get the batter ready. In a bowl pour the cold carbonated water and add the flour little by little, along with a pinch of salt. We mix with a fork or whip so as not to create lumps
- We heat oil to fry in a large pan and when it is hot we pass the skewers in the batter and then dim them in the pan, frying them until golden brown.
- We squalic our skewers on paper and serve them warm!
