Their recipe is secret, but this one is quite similar because in the United States fried chicken is actually made this way, even at home. So we’re confident we’ve come very close to the ‘original’ preparation.
When recreating fast-food recipes at home, the result is always better than the original because you use carefully selected, always fresh ingredients. In this case, the cost of the recipe is also really low. You just need to pay a bit of attention while following all the steps.

The process for preparing American-style fried chicken is different from the typical chicken recipes or fried foods we make in Italy. The meat must marinate in buttermilk mixed with an egg and flavored with a blend of spices. This marinade makes the fried chicken crispy on the outside and tender on the inside. The spice mix can vary greatly from one recipe to another: we used smoked paprika, pepper, oregano, chili pepper, garlic powder, and onion powder. Feel free to choose according to your taste, but keep in mind that the spices are very important.
We prepared the coating using a mix of flour, cornstarch, baking powder for savory dishes, and spices. We then made the chicken even crunchier with a double coating, which isn’t mandatory but is highly recommended.
Another important aspect: we must choose small wings and drumsticks of similar size, so that they cook evenly. White meat, unlike red meat, must always be eaten well cooked.

- In a small bowl, mix together one teaspoon of smoked paprika, a pinch of black pepper and another pinch of chili powder, one teaspoon of oregano, half a teaspoon of garlic powder, and one teaspoon of onion powder.

- Mix the buttermilk, one teaspoon of the spice mix, a bit of salt, and one egg using a fork.

- Dip the chicken into the bowl with the seasoned buttermilk, gently mix, then cover with plastic wrap and let it marinate for at least one hour. You can also marinate the chicken for several hours or in the refrigerator overnight.
