Here’s a really simple and quick recipe to serve a very, very tasty ‘rustic’ appetizer that’s impossible to resist: cabbage fritters! Delicious and crispy, they’re made with just a few ingredients and a straightforward process anyone can follow

What You Need to Make Cabbage Fritters

We need a few cabbage leaves, oil for frying, and the ingredients to make a delicious batter: eggs, grated cheese, flour, sparkling water, and a pinch of salt. This is a rich batter, but if you prefer, you can make the classic one using just beer, salt, and flour. It’s a bit lighter and also suitable for those who, by choice or due to intolerance, don’t eat eggs.

We can call cabbage fritters a ‘recycling’ dish, because the same recipe works well with other types of vegetables too. For example, instead of cabbage, you could use zucchini, cabbage, or cauliflower (which should be boiled first).

Ingredients
  

  • 3 leaves cze large
  • 2 Eggs
  • 1 spoonful grated cheese
  • 35 ml sparkling water
  • 1 pinch salt up
  • 100 g flour 00

Method
 

  1. Clean the cabbage leaves by removing the hard part in the center.
  2. Let's roll them up and cut them into many thin strips, then put them aside.
  3. Let's get the batter ready. In a bowl we break the eggs, add the grated cheese, the carbonated water, the salt and mix well with a fork.
  4. Now we incorporate the flour, always stirring with the fork.
  5. Let's join the cabbage cut to the batter, blending well.
  6. We prepare a pan or a large pan with oil to fry and, as soon as it becomes very hot (about 170 degrees C), we shape our pancakes and fry them by turning them occasionally until golden browning. It'll just take a couple of minutes.
  7. When they are ready, drain them and place them on a sheet of absorbent paper to eliminate excess oil.

Advices

We can enhance the flavor of the batter with some spices or herbs, depending on our tastes. I chose to add just a pinch of salt to better highlight the flavor of the cabbage. Even after frying, I didn’t add any more salt, but personal preferences always come first!
